My hours in the kitchen are fairly limited these days. So at least once a week, my dinner goes as follows... dump in chicken, pour in prepared sauce, turn on crockpot. Ordinarily, I pull the chicken and serve it heaped on top of either a baked potato or microwave rice. Couldn't be easier.
This BBQ chicken stuffed sweet potato rendition has become one of my all time favorites. Reach for your favorite bottle of BBQ sauce and pour over a few boneless skinless chicken breasts. Cook low and slow for several hours. And heap pulled chicken into a baked sweet potato.
And while you could just stop there, I love serving this loaded potato with a healthy drizzle of my Alabama White BBQ Sauce and a handful of tangy pickles. Of course, if you can find a white BBQ sauce in your grocery store, you're welcome to use that. But I really love making my own. During the summer months, I make a batch every few weeks or so and keep it in my fridge. Drizzle it over grilled chicken, use it as a sandwich spread, or top your BBQ Chicken Sweet Potato!
White BBQ Chicken Sweet Potato
Ingredients
For the potatoes
· 1lb boneless, skinless chicken breasts
· ¾ cup BBQ sauce
· 4 medium sweet potatoes
· Salt & pepper
· Dill pickle chips
For the Alabama White Sauce
· ½ cup mayo
· 2 tbsp apple cider vinegar
· Juice of ½ lemon
· 2 tsp prepared horseradish
· ½ tsp Dijon mustard
· 1 tsp honey
· ½ tsp black pepper
Add the chicken and 3/4 cup of BBQ sauce to the bowl of a crockpot. Cook on low for 8 hours.
For the Alabama White Sauce… combine all ingredients in a small mixing bowl. Whisk until smooth. Add a splash of water until the sauce is thick but pourable. Chill in the fridge for at least 2 hours before serving to allow the flavors to combine.
When ready to serve, preheat oven to 400F.
Prick the potatoes with a fork and place on a baking sheet. Bake for 60 minutes until the potatoes are soft and cooked through.
Slice each potato in half and allow some steam to escape. Using a fork, mash each potato while leaving the skin relatively intact. Season to taste with salt and pepper.
Using two forks, pull the chicken into bite sized pieces. Pile the chicken in the cavity of each baked potato.
Top each potato with several pickles and a healthy drizzle of the white sauce.
