This melty sandwich combines a few unexpected ingredients - granny smith apple slices, sharp cheddar, and basil aioli. Sounds weird, but trust me, it works!
And what better week to roll this out than Thanksgiving Week? This recipe is just perfect for using up all those turkey leftovers.
Turkey Apple Cheddar Melt
Ingredients
For the basil aioli
· ½ cup mayo
· Zest & juice of a lemon
· ¼ cup basil, chopped
· 1 tbsp grated parmesan cheese
· ¼ tsp black pepper
For the turkey melt
· 4 slices country bread
· 1/3 lb roasted turkey, sliced thin
· ½ granny smith apple, sliced very thin
· 4 slices sharp cheddar cheese
· 1 tbsp butter, softened
· salt
For the basil aioli… whisk all of the ingredients in a small bowl. Chill until ready to use.
Preheat large, non-stick skillet over medium-low heat.
For the turkey melt… spread a heaping teaspoon of basil aioli across one side of a piece of bread. Layer a slice of cheese over the bread. Top with slices of turkey and then the apples. Top with another piece of cheddar. Spread basil aioli on another slice of bread and top the sandwich, aioli-side down. Repeat with the remaining slides of bread.
Spread softened butter across the top and bottom of each sandwich. Lightly sprinkle each side of the sandwich with salt.
Place each sandwich in the pan. Cover and cook until the bread is golden brown. Flip and continue to cook until the second side is crisp and golden brown.
Slice each sandwich in half and serve.
