Trailer Park Tacos


One of my favorite taco joints in Texas serves up what they call a "Trailer Park Taco." Nothing fancy, but oh so tasty. A fried chicken tender is topped with plenty of cheese, pico and a healthy drizzle of poblano ranch. Yum!


So I decided I'd riff on this taco at home. While you can certainly fry up your own tenders, I just don't have the bandwidth to make that happen midweek. So I picked up a bag of tenders in the frozen food isle. Your grocery store deli might also box up hot tenders for quick pick-up after work. Whatever your preference, the remaining prep work is minimal.


Similarly, I wouldn't bother making a poblano ranch from scratch. There are plenty of delightful brands in the grocery store to pick from! If you can't find poblano, a chipotle ranch would be an equally delicious substitute.


For extra fresh flavor and crunchy texture, I opted to add corn to an otherwise classic pico salsa. And I personally feel every taco could benefit from a creamy avocado, so I added a slice just for good measure.


This recipe comes together easy peasy! You're going to love it!


Trailer Park Tacos


Ingredients

For the corn pico

· 2 ears fresh corn, kernels removed from the cob

· 1 tomato, diced

· ½ jalapeno, seeded and minced

· 2 tbsp red onion, minced

· 1 tbsp fresh cilantro, chopped

· Juice of a lime


For the tacos

· 12 frozen, breaded chicken tenders

· 12 corn or flour tortillas

· 1 cup shredded cheddar cheese

· 1 ½ cup shredded lettuce

· 1 avocado, sliced

· 1/3 cup poblano ranch


For the pico… combine all ingredients in a bowl and set aside.


For the tacos… reheat the chicken tenders per package instructions either in the air fryer or oven. While heating the chicken, wrap the tortillas in aluminum foil and place in the oven for at least 10 minutes or so. Keep warm in the oven until ready to serve.


To serve, place a chicken tender in the center of a tortilla. Top with a healthy sprinkle of cheese and lettuce. Top with a spoonful of corn pico, a slice of avocado and a drizzle of poblano ranch. Repeat with the remaining chicken tenders and tortillas
