Tomato Basil Turkey Meatloaf


Meatloaf was a regular in the dinner rotation when I was a kid. And while lots of folks seem to struggle with the concept of meatloaf, I freaking love it. My mom used to braise her meatloaf in the oven slathered with condense tomato soup. The tomato soup kept the meatloaf nice and moist and made for a perfect sauce to pour over noodles.


So I took inspiration from my mom's meatloaf recipe and boosted the flavor a bit. This recipe calls for loads of fresh herbs - parsley and basil - and a handful of sundried tomatoes!


Condensed soup isn't exactly gluten free, but I wanted a similar flavor and texture for the sauce of this meatloaf. I've found plain tomato sauce whisked together with a bit of brown sugar for a touch of sweetness and cornstarch for thickness. But if you're looking for quick convenience, a can of Campbell's will work wonderfully!


And while you can certainly serve Tomato Basil Meatloaf with a pile of creamy, whipped potatoes, in our household meatloaf always came along with a healthy spoonful of macaroni noodles.


So for me, meatloaf, velvety tomato sauce, and noodles just scream "comfort food." Hopefully, you'll find the same.



Tomato Basil Turkey Meatloaf


Ingredients

· 1 tbsp olive oil

· 1/3 cup onion, diced fine

· 1 garlic clove, minced

· 1/3 cup bread crumbs

· 1/3 cup pecorino romano cheese, grated

· 3 tbsp sundried tomatoes, minced

· 2 tbsp fresh parsley, chopped

· 2 tbsp fresh basil, chopped

· 1 egg

· ½ tsp salt

· ¼ tsp black pepper

· 1lb lean ground turkey

· 15oz tomato sauce, not marinara

· 2 tbsp brown sugar

· 1 tbsp cornstarch


Preheat oven to 350F.


Add olive oil to a small pan and sautee onions and garlic over low heat until translucent. Allow to cool.


In a large mixing bowl, combine the onions, garlic, breadcrumbs, cheese, tomatoes, parsley, basil, egg, salt and pepper. Add the ground turkey. Fold the breadcrumb mixture evenly into the turkey.


In a small mixing bowl, whisk together tomato sauce, brown sugar, and cornstarch.


Pour the tomato sauce into a small, greased baking dish. Form the turkey mixture into a loaf and position the loaf in the middle of the baking dish. Ladle some of the sauce over the top of the meatloaf.


Bake the meatloaf for about 1 hour until cooked through. Slice and serve over mashed potatoes or mini shell noodles.
