I'm sure this holiday season looks a bit different for most households out there. Maybe you're planning to gather with a few family members to celebrate Thanksgiving. Or perhaps you're rocking it with your roommate or spouse this year. If planning on a smaller gathering, rather than roasting a large turkey give this Thanksgiving Meatloaf a try!
Ground turkey meat is seasoned well with an abundance of fresh parsley, sage, rosemary and thyme. It's studded with sauteed onions and celery for added moisture and flavor. And slathered with tart cranberry sauce. All the classic Thanksgiving flavors on one fork!
It's easy to throw together and relatively quick to bake. I'd serve with gravy just as you would a slice of turkey. And then it's a simple matter of narrowing in on your favorite holiday sides.
Thanksgiving Meatloaf
Ingredients
· 1 tbsp olive oil
· 1/3 cup onion, diced fine
· 1 stalk celery, diced fine
· 2 tbsp dry white wine
· 1/3 cup bread crumbs
· 1 tbsp fresh parsley, minced
· 1 tbsp fresh sage, minced
· 1 tsp fresh thyme, minced
· 1 tsp fresh rosemary, minced
· 1 egg
· ½ tsp salt
· ¼ tsp black pepper
· ½ cup prepared cranberry sauce
· 1lb lean ground turkey
Preheat oven to 375F.
Add olive oil to a small pan and sautee onions and celery over low heat until translucent. Deglaze pan with white wine. Allow the alcohol to evaporate. Remove from heat and cool.
In a large mixing bowl, combine the onions, celery, breadcrumbs, herbs, egg, salt and pepper. Stir in 2 tbsp cranberry sauce. Add the ground turkey. Fold the breadcrumb mixture evenly into the turkey.
Form the turkey mixture into a loaf and position the loaf in the middle of a greased baking sheet. Spoon the remaining cranberry sauce over the top of the meatloaf.
Bake the meatloaf for about 35 minutes until cooked through. Slice and serve.

Notes
Serve with mashed potatoes or stuffing and a ladle of gravy!
