Pretty enough for company, but easy enough for mid-week meals.
I love any dish all coming together in one big pot or pan. You've got your protein, carbs, and veggies in one spoonful. Taco Skillet isn't overly sophisticated, but it's hearty, fresh and satisfying. It's a regular in my weeknight dinner rotation.
Taco Skillet
Ingredients
· 2 tbsp olive oil
· 1lb ground turkey or beef
· 1 small onion, diced
· 1 red pepper, diced
· 3 tbsp chili powder
· 2 tsp cumin
· 1 tsp coriander
· 1 tsp garlic powder
· 1 tsp salt
· ½ tsp pepper
· hot sauce, to taste
· 1 cup tomato sauce (not marinara)
· ¼ cup water
· 2 cups brown rice, cooked
· ½ cup cheddar cheese, shredded
· 2 cups romaine, shredded
· 1 cup tomatoes, chopped
· 1 avocado, chopped
· ½ English cucumber, chopped
· ¼ cup cilantro, chopped
· 1 lime, cut into two wedges
· 1 cup fritos or crushed corn chips
Heat olive oil over medium high heat in a large skillet. Add the ground turkey. Crumble and brown. Lower to medium low heat and add the onions and peppers. Sautee until onions are translucent. Add all spiced and hot sauce. Stir in the tomato sauce and water. Simmer for 3-4 minutes.
Fold in the rice and ensure rice is coated in the sauce. Cook for 1-2 minutes until rice is heated through. Smooth the mixture evenly across the pan. Sprinkle cheese over the turkey and rice. Remove from the heat and top with all remaining ingredients.
