I have a bit of a pasta problem...I just love it so damn much! Rotini, fettucine, farfalle. Bolognese, pesto, alfredo. Stuffed, baked, fried. The pasta-abilities are endless. You see what I did there?
This skillet recipe marries Supreme Pizza and Gnocchi in one glorious, hearty forkful! But take all the liberties you want with the meats and veggies. Customize this dish just as you would your pizza order. Meat Lovers, Veggie, maybe you're even one of those weird Hawaiian peoples?
I prefer gnocchi in this skillet. I find the chewy, toothy texture is a bit more reminiscent of pizza crust. But any short noodle - rotini, penne, rigatoni - will do you just fine.
Whatever you mix in, just be sure to cover in cheese and bake until brown and bubbly! The cheese pulls on this dish - to die for.
Supreme Pizza Gnocchi Skillet
Ingredients
· 2 tbsp olive oil
· 2 Italian sausage links
· ½ red onion, diced
· 1 red or green pepper, diced
· 1 cup mushrooms diced
· 2 garlic cloves, minced
· 1/3 cup mini pepperoni slices
· ¼ cup black olives, sliced
· ½ tsp salt
· ¼ tsp black pepper
· ½ tsp garlic powder
· 1 tsp dried oregano
· ½ tsp dried basil
· 23oz jarred marinara sauce
· 24oz potato gnocchi
· ¼ cup parmesan, grated
· 1 cup mozzarella, grated
· Fresh basil, torn
Preheat oven to 450F.
Heat olive oil in a large cast iron or oven-safe skillet over medium high. Remove the sausage from its casing and add to the pan. Crumble and brown the meat. Add onions, peppers, mushrooms, and garlic. Sautee for 3-5 minutes until onions are translucent and mushrooms begin to brown. Reduce heat to low and add pepperoni, olives, and spices. Stir in the marinara sauce and simmer for at least 20 minutes.
Cook the gnocchi per package instructions. Do not overcook. Drain gnocchi and add to the pan with the sauce.
Gently fold in the gnocchi and parmesan cheese. Spread into an even layer in the pan. Top with mozzarella cheese. Bake for 10-15 minutes until the cheese is melted and begins to brown and bubble.
Garnish with torn fresh basil.

DeLallo Gluten Free Potato Gnocchi are a great substitute for this dish. Otherwise grab a short noodle like penne or rotini.
