Steakhouse Burger

Burgers make for a fabulous blank canvas. I often like to pick a theme to channel my creative juices. This weekend's them: Steakhouse!

So I started thinking about some of my favorite steak pairings... red wine, obviously... mushrooms, onions, blue cheese... There's some pretty decent makings for burger toppings right there. But how to bring them all together?

Mushrooms are great little flavor sponges. So I sauteed sliced mushrooms in red wine. Just be sure to pick something you enjoy drinking.

I opted to grill onions alongside the burgers for convenience. Plus I can't resist a beautiful grill mark. But a couple fried onions rings atop this burger would be stellar too!

Now these onion rings make a perfect vessel to contain the rest of the burger toppings. Alongside the red wine mushrooms, I heaped on crumbled blue cheese. And to help tie it all together, I drizzled over creamy mayonnaise flavored with steak sauce.

These burgers came together so quickly, and were the perfect weekend treat with a glass of wine!

Steakhouse Burger

Ingredients

For the red wine mushroom

· 1 tbsp olive oil

· 6oz baby bella mushrooms, sliced

· ¼ tsp salt

· ¼ tsp black pepper

· ¼ tsp dried thyme

· 1/3 cup dry red wine, such as Cabernet

For the steak sauce mayo

· 2 tbsp mayo

· 2 tbsp steak sauce

For the burgers

· 2 1/4lb beef patties

· Olive oil

· Steak seasoning

· 2 thick slices of sweet onion

· Worcestershire sauce

· 2oz blue cheese, crumbled

· 2 brioche buns, toasted

Preheat the grill to medium high heat.

For the red wine mushrooms… heat olive oil in a small skillet over medium heat. Add the sliced mushrooms. Allow the mushrooms to brown. Once they begin to develop some color, season with salt, pepper, and thyme. Add the red wine and reduce heat to low. Allow the mushrooms to simmer and cook in the red wine until the mushrooms are soft and the wine evaporates. Turn off the heat and set aside.

For the steak sauce mayo… combine the mayo and steak sauce in a small bowl using a whisk. Set aside.

Drizzle the burger patties and onion slices with a bit of olive oil and season liberally with steak seasoning.

Place the burger patties on the grill. Sprinkle over a dash of Worcestershire sauce. Cook covered over medium high heat for 4-5 minutes. Flip the patties and cook for another 4-5 minutes. Burgers will be pink and medium. Cook for an extra 1-2 minutes for medium-well.

While the burgers cook, grill the onion slices. Place the onions on the grill, taking care not to lose an of the rings through the grill grates. Cook until nice, dark grill marks develop. Flip and repeat on the other side.

While the burgers and onions cook, toast the buns on the top grill rack until warm.

To serve the burgers, place the burger on the brioche bun. Top with a few grilled onion rings. Nestle a large spoonful of the red wine mushrooms into the onion rings. Spoon over the crumbled blue cheese and drizzle the burger with the steak sauce mayo. Top with the remaining bun. Repeat with the remaining burger.
