Sloppy Joe Totdish


Real talk. I really enjoy the flavor profile of a Sloppy Joe. But frankly, I'm not in love with my meal ending up on my plate instead of in my mouth. I suppose I'm really seeking a Neat Joe.


While I'm changing the rules, figured I had better top the Joe with melty cheese and crispy tater tots. I snuck in a few veggies as well - diced bell peppers and tomatoes. Just a perfect (and tidy) forkful for a quick weeknight dinner!


In fact, if you're into meal-prep, this dish would keep perfectly in the fridge or freezer until ready to bake-off and serve.



Sloppy Joe Totdish


Ingredients

· 2 tbsp olive oil

· 1lb ground meat, turkey or beef

· 1 small onion, diced

· 1 red pepper, diced

· 1 green pepper, diced

· 14oz petite diced tomatoes

· 3 tbsp tomato paste

· 3 tbsp brown sugar

· 2 tbsp Worcestershire sauce

· 1 tbsp yellow mustard

· 1 tsp hot sauce

· 1 tsp garlic powder

· ½ tsp salt

· ½ tsp pepper

· 6 slices cheddar cheese

· 4-5 cups frozen tater tots

· ½ tsp seasoned salt (Lawry’s)


Heat oil over medium high heat in a large oven-safe skillet. Add the ground meat. Crumble and brown the meat. Reduce the heat to medium low and add the onion and peppers. Cook until translucent. Stir in tomatoes. Add tomato paste, sugar, Worcestershire, mustard, hot sauce, garlic powder, salt and pepper. Simmer on low for 10 minutes.


Preheat oven to 450F.


Top the sloppy joe mixture with an even layer of cheese slices. Align the tater tots in rows across the dish covering as much of the cheese layer as possible. Sprinkle seasoned salt over the tots. Bake for 25-30 minutes until the tater tots are golden brown.
