Shrimp Scampi Linguine


When I think Shrimp Scampi, I'm immediately transported back to my home-away-from-home at the Outer Banks. While at the beach, my family makes a point to eat as much fresh and local fish we can get. Shrimp are no exception. And Scampi is such a fabulous dish to showcase plump, sweet shrimp.


The lemony wine sauce comes together just as quickly as you can cook the linguine making this a great dish after a long day of lounging on the beach or even a simple weeknight meal at home.


Shrimp Scampi Linguine


Ingredients

· 12oz linguine noodles

· 3 tbsp butter

· 2 tbsp olive oil

· 2 shallots, diced

· 4 garlic cloves, minced

· ¼ to ½ tsp red pepper flakes

· Zest of 2 lemons

· 10oz fresh shrimp, peeled and deveined

· ½ tsp salt

· ½ tsp black pepper

· Juice of 2 lemons

· ½ cup dry white wine

· ¼ cup flat leaf parsley, chopped


Cook the pasta per package instructions until al dente in an abundance of salted, boiling water.


While the pasta cooks, melt the butter and oil over medium heat and sautee the shallots, garlic, red pepper flakes, and lemon zest. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes until just pink. Add the lemon juice and white wine, increase heat, and bring to a boil.


Toss pasta and parsley into the sauce. Serve immediately.


Serves 4


Notes

It’s controversial depending on who you talk to, but feel free to finish the pasta with a shower of parmesan cheese. I won't tell.

We prefer Barilla Gluten Free pasta for this dish.
