Salisbury Steak with Red Wine Mushroom Gravy


Salisbury Steak typically reads like a hamburger patty simmering in onion gravy. Certainly nothing wrong with a classic. But I thought I'd elevate the steak with a velvety onion and mushroom gravy made with both beef stock and red wine.


I'd serve these patties up on creamy, whipped potatoes. Buttered egg noodles would also be delightful. Basically, you're looking for a delightful vehicle to sop up all the beefy, mushroom gravy. Yum. The perfect pairing for a warm and hearty dinner.


Salisbury Steak


Ingredients

For the steak

· 1/3 cup bread crumbs

· 1/3 cup pecorino romano cheese, grated

· 2 tbsp fresh parsley, chopped

· 1 tbsp ketchup

· 1 tsp Dijon mustard

· 4 dashes Worcestershire sauce

· 1 egg

· ½ tsp salt

· ¼ tsp black pepper

· 1lb ground beef


For the mushroom gravy

· 1 tbsp olive oil

· 1 tbsp butter

· 1 onion, sliced thin

· 8oz mushrooms, sliced thin

· 1 tbsp flour

· 1/3 cup red wine

· 1 cup beef stock

· 4 tbsp ketchup

· 1 tsp Worcestershire sauce

· 1 tbsp brown sugar

· 1 ½ tsp fresh thyme, minced

· ½ tsp salt

· ¼ tsp black pepper


For the steaks… combine all of the ingredients but the beef in a large mixing bowl. Once combined, gently fold in the ground beef. Combine with two forks to gradually fold in the bread crumb mixture without overworking the meat. Form 4 oval-shaped patties.


In a large skillet, heat the olive oil and butter over medium high heat. Sear the steaks for about 2-3 minutes on each side until a golden brown crust develops. Remove from the pan and set aside.


Reduce the heat to medium low. Add the onions and mushrooms. Sautee until the onions are soft and translucent. Sprinkle over the flour. Cook for 2-3 minutes until the flour is pale brown. While stirring, add the red wine. Bring to a hard simmer and allow the alcohol to evaporate. Then stir in the beef stock. Reduce heat to low. Stir in the ketchup, Worcestershire, brown sugar, thyme, salt and pepper.


Nestle each steak into the sauce. Cover and allow to simmer for another 15-20 minutes until the steaks are cooked through. Periodically ladle the sauce over the steaks.


Serve over buttered egg noodles or mashed potatoes.

Gluten Free Friendly! Swap the bread crumbs for gluten free bread crumbs! Substitute the flour for whatever GF rice flour you have on hand.
