Rosemary Spiced Nuts


I always keep a few different nuts on hand in my pantry. My husband often grabs a handful for a little extra protein in the morning, and we love keeping them around for a healthy snack. I find they also come in handy any time I'm adorning a charcuterie board.


Ordinarily, I'd simply open a bag of salted nuts and scatter them across the board. But during the holiday season, I may be so inclined to go the extra mile. Especially for Rosemary Spiced Nuts.


These nuts pack a punch of holiday flavor with fresh rosemary and orange zest. They're a bit sweet, a bit spicy. And Not to mention glossy and gorgeous. Frankly these nuts can easily stand alone in a big ol' bowl alongside your favorite holiday cocktail!


Rosemary Spiced Nuts


Ingredients

· 1 tsp kosher salt

· ½ tsp cayenne pepper

· ½ tsp cinnamon

· Zest of an orange

· 1 tbsp fresh rosemary, minced

· ¼ cup dark brown sugar

· 2 tbsp water

· 1 lb mixed unsalted nuts

· 2 tbsp butter


Line a baking sheet with parchment paper and set aside.


Combine the salt, pepper, cinnamon, orange zest and rosemary in a small bowl. Set aside.

Combine the sugar and water. Set aside.


Heat a large non-stick skillet over medium heat. Add the nuts and toast for about 3-4 minutes until they start to brown. The nuts will smell toasted. Add the butter and stir until melted. Sprinkle over the spice mixture. Add the sugar mixture.


Stir the nuts until the mixture begins to thicken and coats the nuts – about 2 minutes.

Pour the nuts onto the parchment-lined pan. Quickly separate the nuts using two forks while the sugar is still warm. Allow the nuts to cool completely.


Store in an airtight container.


Makes 3 cups


Notes

I used equal parts pecans, walnuts, cashews, almonds and peanuts. I sprinkled in a handful of pistachios as well. Adjust the ratios to your preference or mix in others – brazil nuts or hazelnuts would be fabulous too!


If your nuts are already salted, omit the salt in the spice mix.
