Queso Fries

We maintain a pretty healthy and balanced diet Sunday through Thursday. But come the weekend, I like to let loose a bit and have fun with my food. I kinda just let my imagination run wild and lean into a creative theme to bring a little levity to the weekend. Makes it feel all the more special - not just some other day.


A tasty burger and fries is often on my weekend menu. And fries themselves are delightful. But top them with queso, chorizo and pico and you really got something going. This recipe has Cheat Day written ALL over them!


For this recipe in particular, I really like to use waffle fries. I'm sure everyone has their favorite fry cut. I happen to think crinkle fries are pretty tasty, and my husband is a die-hard curly fry guy. And that's all well and good. But we're about to pile a mountain of goodies on these fries. I find the waffle fry offers lots of good real-estate for melty queso and all the fixings. Kinda like tortilla chips on a plate of nachos.


Now you certainly could plate these fries up individually, but I like to serve these fries on a big platter in the middle of the table, and let folks dive right in. These would also make for a fabulous snack the next time you sit down to watch a football game. Or a heavy app during your next game night... surely I don't have to create an excuse for you to plow through a plate of Queso Fries....


Queso Fries


Ingredients

For the Quick Queso

· 1 tbsp olive oil

· ¼ large yellow onion, minced

· 2 tsp garlic, minced

· 5 oz canned diced tomatoes and chilies

· 6 oz evaporated milk

· 8oz processed cheese (like Velveeta)

· 2 oz pepper jack cheese, shredded


For the fries

· 22oz frozen waffle fries

· 1 tomato, seeded and diced

· 1 tbsp cilantro, chopped

· ½ jalapeno, minced

· 1 tbsp red onion, minced

· Juice of a lime

· 1/3 lb chorizo sausage, cooked and crumbled

· 1 avocado, diced

· Pickled jalapeno slices


For the Quick Queso…Heat olive oil in the bottom of a large saucepot over medium low heat. Add the onion and garlic and cook until translucent.


Add the evaporated milk and tomatoes and chilies. Bring to a low simmer.


Cut the processed cheese into 1-inch cubes and add to the pot along with the pepper jack cheese. Continue to stir the queso over low heat until all the cheese has completely melted.


For the Fries…Prepare fries per package instructions until crispy and brown.


While the fries cook, combine the tomato, cilantro, jalapeno, red onion and lime juice in a small bowl. Set aside.


On the serving platter, alternate layers of hot fries, queso, chorizo, pico, and avocado. Top with pickled jalapenos as desired.
