Pumpkin Swirl Brownies


Make no mistake about it, these brownies are dense, rich and fudgy. And while I don't often pair pumpkin and chocolate, something about these Pumpkin Swirl Brownies is just delightful.


Sweet, spiced and decadent. Such a fun and festive treat!





Pumpkin Swirl Brownies


Ingredients

For the brownies

· 7oz semi sweet chocolate pieces

· 8 tbsp butter, cubed

· 3 tbsp cocoa powder

· 1 ¼ cups sugar

· 3 eggs

· 2 tsp vanilla extract

· ½ tsp instant espresso powder

· ¾ cup plus 2 tbsp flour

· ½ tsp salt


For the pumpkin cream cheese

· 4oz cream cheese, softened

· 1/3 cup sugar

· 1 egg

· Pinch of salt

· 1/3 cup pumpkin puree

· ½ tsp cinnamon

· ¼ tsp ground ginger

· ¼ tsp ground clove


Preheat oven to 350F. Line an 8x8in pan with parchment paper; leave a 2in overhang of parchment for easily lift bars from the pan. Lightly coat the parchment with non-stick spray.


For the brownies…Melt the chocolate, butter and cocoa powder in the bowl of a double-boiler over simmering water. Stir until smooth. Allow to cool.


In a large mixing bowl, whisk together sugar, eggs, vanilla and espresso powder. Whisk in the cooled chocolate mixture until smooth. Sift over the flour and salt. Stir until batter is uniform.

Pour the brownie batter into the prepared pan.


For the pumpkin cream cheese… In a small mixing bowl, cream together cream cheese and sugar until smooth. Beat in the egg until smooth. Stir in a pinch of salt. Pour about ½ of the mixture into a separate bowl and set aside. Add the pumpkin puree and spices to the original bowl, and stir.


Pour the white cream cheese mix and pumpkin cream cheese mix in alternating lines across the top of the brownie batter. Drag a butter knife across the top of the brownies in lines to swirl the colors.


Bake for 50-60 minutes until a toothpick inserted comes out clean.


Allow the brownies to cool in the pan for about 1 hour. Lift the brownies out of the pan using the parchment sling and cut into 16 equal squares.


Makes 16 brownies



Gluten Free Friendly!

Substitute the flour for a GF flour blend. I recommend King Arthur or Cup4Cup. Add ½ tsp xanthan gum.
