Pumpkin Spiced Nuts

Sometimes a bowl of nuts is all you need to bust out when entertaining company over happy hour. Of course, plain ol' roasted, salted nuts will do the trick. But the closer we get to the holidays, I like to spice my nuts. It doesn't take but a few minutes and a few ingredients. So I figure, why not go the extra mile?


This nut mix is subtly sweet with notes of cinnamon, ginger, clove and nutmeg. These nuts are perfect on their own, but would also make for a great accompaniment on your next cheese board.


Pumpkin Spiced Nuts


Ingredients

· 1 tsp kosher salt

· 2 tsp cinnamon

· 1 tsp ground ginger

· ½ tsp ground cloves

· ½ tsp ground nutmeg

· ¼ cup dark brown sugar

· 2 tbsp water

· 1 lb mixed unsalted nuts

· 1/3 cup pumpkin seeds

· 2 tbsp butter


Line a baking sheet with parchment paper and set aside.


Combine the salt and spices in a small bowl. Set aside.


Combine the sugar and water. Set aside.


Heat a large non-stick skillet over medium heat. Add the nuts and pumpkin seeds and toast for about 3-4 minutes until they start to brown. The nuts will smell toasted. Add the butter and stir until melted. Sprinkle over the spice mixture. Add the sugar mixture.


Stir the nuts until the mixture begins to thicken and coats the nuts – about 2 minutes.


Pour the nuts onto the parchment-lined pan. Quickly separate the nuts using two forks while the sugar is still warm. Allow the nuts to cool completely.

Store in an airtight container.


Makes 3 cups


Notes

I used equal parts pecans, walnuts, cashews, almonds and peanuts. Adjust the ratios to your preference or mix in other tasty treats like white chocolate chips and dried cranberries.


If your nuts are already salted, omit the salt in the spice mix.
