Pumpkin Pie Yogurt Parfait


I enjoy a bowl of greek yogurt nearly every morning throughout the summer. Ordinarily I mix in fresh berries and sweet bananas. As the weather starts to turn, and we creep closer to the holidays, ripe berries become a bit more of a challenge to find and frankly, it just doesn't scratch that warm, cozy itch.


This is typically where I'd cue Pumpkin Spice Oatmeal season. And trust me, we'll get there. But while the temperature is still a bit toasty, I thought I might try my hand at a pumpkin inspire yogurt bowl.


I start by making my own Pumpkin Pie Bliss Butter. The blend of pumpkin puree, spice, and touch of almond is all too reminiscent of a pumpkin pie and helps sweeten the greek yogurt. Then I make a quick granola with a little help from the grocery store! Simply combine your favorite crunchy granola, pumpkin seeds, dried cranberries and a touch of pumpkin pie spice. Swirl these components together and you've got yourself one delicious breakfast.


This also makes for a great addition to your next brunch buffet. Serve each of the components in individual dishes, and let your guests go to town swirl together their own parfaits.

Pumpkin Pie Yogurt Parfait


Ingredients

For the pumpkin spice granola

· 1 cup crunchy granola

· ¼ cup roasted pumpkin seeds

· ¼ cup dried cranberries

· ¼ tsp pumpkin pie spice


For the parfait

· 2 cups plain Greek yogurt


In a small bowl, combine the granola, pumpkin seeds, and cranberries. Sprinkle over the pumpkin pie spice and stir to combine.


In the bottom of a small drinking glass or bowl dollop about ¼ cup of yogurt. Swirl in about 1 tbsp of the pumpkin butter. Sprinkle over a heaping spoonful of the granola. Top with another ¼ cup of yogurt swirled with 1 tbsp of pumpkin butter. Sprinkle over another spoonful of the granola.


Repeat with the remaining yogurt to make an additional 3 parfaits. Serve immediately to ensure the granola remains crunchy.


Alternatively, serve the yogurt, pumpkin butter and granola in individual bowls buffet style so guests can build their own parfait.
