I met a friend one Friday morning for a cup of coffee at my all time favorite bakery. Initially I was just going to grab a latte... but they had the most beautiful croissants in the display case. And not just any croissant, but a Pumpkin Pie Croissant. It sounded so delightful that I just had to try one!
The croissant was crisp and flaky with a dollop of the most delightful hat-tip to pumpkin pie filling right in the middle. It was like almond paste and pumpkin pie had a baby right in the middle of my pastry. And while I initially thought almond and pumpkin might be a funky pairing... boy howdy was I wrong and very wrong. It was truly so delicious.
This Pumpkin Pie Bliss Butter is an homage to that delightful croissant! Spread it on fresh croissants, toasted brioche, cinnamon raisin bread... Serve it as a dip with graham crackers... Stuff it into snickerdoodles or popovers... Spoon it over a tennis shoe for all I care! I promise you, you can't go wrong.
Pumpkin Pie Bliss Butter
Ingredients
· ½ cup almond flour
· ½ cup pumpkin
· ½ tsp almond extract
· ¾ tsp pumpkin pie spice
· Pinch of salt
· ¾ to 1 cup powdered sugar
Whisk together the almond flour, pumpkin, extract, and spices in a small bowl. Mix in sugar to your desired sweetness.
Store in an air-tight container in the fridge until ready to serve.
Makes about 1 cup
