Peaches'n'Cream Oatmeal


I had a craving the other day for Peaches'n'Cream Oatmeal. You know, those pouches of sugary oats and dried fruity pieces? That's like childhood in a bowl right there! So I thought I might try my hand at recreating the peachy goodness, but perhaps just a touch elevated.


In peak season, there is absolutely nothing better than a sweet, juicy, summer peach! So deliciously addictive. But honestly, so difficult to come by. Peach season always seems to come and go in the blink of an eye in my neck of the woods. If you've managed to hit the peachy jackpot, by all means, use fresh peaches in this recipe. Otherwise, I prefer canned.


When cooking the oats, I also like to use a blend of peach juice and whole milk. The juice helps to amp up the peach flavor and sweeten the oats. And the whole milk, of course, brings the "Cream" to the Peaches'n'Cream Oatmeal. Of course, you can use other milk alternatives, but you might be lacking a bit in flavor and texture, especially considering the simplicity of this ingredient list.


If you're waking up one morning thinking "treat yo'self," I'd recommend serving the warm, peachy oatmeal with a small spoonful of cold vanilla ice cream. Likely negates any of the health-conscious decisions you've made up to this point in choosing to eat a bowl of oatmeal for breakfast. But hey, you gotta live a little.


Peaches’n’Cream Oatmeal


Ingredients

· 2 cups whole milk

· ½ cup canned peach juice

· 2 tbsp sugar, or more to taste

· 1 cup rolled oats

· 1 cup diced, canned peaches

· 1 tbsp vanilla extract

· Pinch of salt

· Vanilla ice cream, optional


In a medium saucepan, combine the milk, peach juice, and sugar. Bring to a simmer over medium high heat. Stir in the oats, diced peaches, vanilla and salt. Bring the oats to a simmer, cover and reduce the heat to low. Cook for another 15 to 20 minutes until the oats are cooked through.


Spoon the hot oatmeal into a bowl, and if desired, serve with a small scoop of vanilla ice cream.
