Overnight oats are about all I can muster in the kitchen these days at 38 weeks pregnant. They come together super quick - no stove required - and keep for days! Plus they're so refreshingly delicious on a hot summer morning.
Overnight oats are simply rolled oats mixed together with milk allowed to soak until morning. You can get inventive with the milks and mix-ins of course. I leaned into sitting-on-a-beach, summer vibes and opted for coconut milk and a heap of shredded, chewy coconut. For good nutrition and added flavor, I top my bowl with plenty of fresh fruit. All part of a balanced breakfast!
Coconut Overnight Oats
Ingredients
· 2 cups old fashioned rolled oats
· ¾ cup shredded, sweetened coconut
· 3 cups unsweetened coconut milk drink
· 2 tbsp brown sugar
· 1 tsp vanilla extract
· ¼ tsp coconut or almond extract
· ¼ tsp cinnamon
· Pinch of salt
For serving (optional)
· Sliced bananas
· Diced mango
· Assorted berries
· Toasted, shredded coconut
· Toasted, slivered almonds
In a medium bowl combine the oats, shredded coconut, coconut milk, brown sugar, extracts, cinnamon, and salt. Transfer to an airtight storage container. Chill overnight or for at least 8 hours.
Serve bowls of the oatmeal chilled topped with fresh fruit and toasted nuts as desired.
