Mini Key Lime Pie Cheesecakes


Pie? Cheesecake? Why decide when you could just combine the two?!


Mini Key Lime Pie Cheesecakes are summer in a cup! Refreshingly citrusy, creamy and sweet, these cheesecakes make for the perfect finish to a summer meal with friends.



Mini Key Lime Pie Cheesecakes


Ingredients

For the cheesecakes

·       8oz cream cheese, softened at room temp

·       14oz sweetened condensed milk

·       2 egg yolks

·       Zest and juice of 8 key limes (or 4 limes)

·       10 vanilla wafer or butter cookies

·       Lime wedges, for garnish


For the whipped cream

·       1 cup heavy cream

·       2 tbsp powdered sugar

·       ½ tsp vanilla extract


Preheat oven to 350F.


In the bowl of the stand mixer fitted with a paddle attachment beat the cream cheese until smooth. Scrape down the sides of the bowl and add the sweetened condensed milk. Beat the cream cheese and condensed milk until completely smooth. Scrape down the sides of the bowl and add the egg yolks. Again, beat until smooth. Stir in the lime zest and juice.


Line a cupcake pan with paper liners. Lightly grease the paper liner with nonstick spray. Place one cookie in the bottom of each paper liner. Using a large ice cream scoop, divide the cheesecake batter among the cupcake tins. The batter should reach just below the edge of the paper liners.


Bake for about 16-18 minutes until the center of the cheesecakes are puffed and just set. The center of the cheesecakes should still jiggle slightly.


Allow the cheesecakes to cool to room temperature for about 30-60 minutes. Transfer to a serving platter and chill in the fridge for at least 2 hours before serving. Loosely cover in plastic wrap once chilled.


While the cheesecakes chill, prepare the whipped cream… Add the heavy cream to the bowl of a standmixer fitted with a whisk attachment. Beat on medium speed and gradually increase speed to high. Once the whipped cream starts to thicken, whisk in the powdered sugar and vanilla extract on low speed. Then increase to high speed and whip until stiff peaks form.


Once chilled, dollop or pipe the whipped cream on top of each cheesecake. Garnish with a small wedge of lime.


Makes 10 mini cheesecakes
