Kitchen Sink Hummus Dip

My fireplace mantel may say "fall," but the temperature outside still reads pretty summery to me! We're still sitting and sipping poolside these days, so before I start venturing down the pumpkin-flavored rabbit hole, I thought I might share this delightfully fresh and punchy Hummus Dip.


Versions of this dip are often referred to as "Hummus Layer Dip." Which makes a fair bit of sense if your intent is keep the ratio of ingredients relatively similar, stack in neat layers and serve in a glass pan. But as I had zero intent to do so, I decided best to delineate, and thus "Kitchen Sink Hummus Dip" was born!


It starts with a combination of fresh tomatoes, cucumber and onion. A handful of briny olives and pepperoncini. And a sprinkle of bright herbs and salty feta. This mixture is heaped onto a bed of creamy hummus. Chef's choice to make or buy. Store-bought hummus is pretty delightful and makes this dip stupid easy. But if you want to go that extra mile, be my guest.


I like to serve this dip in a shallow bowl with a big bowl full of tortilla chips. Though truth be told, if I wasn't playing within gluten-free parameters, I'd totes swap the chips for warm wedges of fresh pita bread. Not the cardboard crap you find in the pantry section of the grocery store. No, no! I'd visit my favorite Greek restaurant and order a few pita a la carte!

Kitchen Sink Hummus Dip

Ingredients

· 2 roma tomatoes, seeded and diced

· 1/3 cup English cucumber, diced

· ¼ cup kalamata olives, sliced

· 2 tbsp pepperoncini, minced

· 1 tbsp red onion, minced

· 1 tbsp fresh parsley, minced

· 1 tbsp fresh dill, minced

· 2 tsp fresh mint, minced

· Pinch of salt

· 10 oz prepared hummus, traditional or roasted garlic

· 1-2 oz feta, crumbled

· Olive oil

· Dippers for serving (pita bread, tortilla chips, crostini, carrot chips)


In a medium bowl, combine the tomatoes, cucumber, olives, pepperoncini, red onion, fresh herbs and a pinch of salt. Chill until ready to serve.


Spread the hummus across the bottom of a shallow serving bowl or plate. Heap the tomato mixture over the hummus. Scatter the crumbled feta over the top of the tomato mixture. Drizzle over a bit of olive oil.


Serve dip chilled alongside your choice of breads, crackers or chips.
