Key Lime Pie Cookies


Cramming two desserts into one can only prove to be marvelous.


If you're going to mash up recipes, you have to make sure the classic flavors and components are well represented. The key lime custard - no brainer. Obviously just add a boatload of lime zest. To mimic the whipped topping, I added white chocolate chips. Oat flour creates some nuttiness in the cookie similar to the typical graham cracker crust.


It's an easy recipe to throw together. And it's a tropical little spin on your average chocolate chip cookie!



Key Lime Pie Cookies


Ingredients

· 8 tbsp butter, softened

· 2oz cream cheese, softened

· ¾ cup dark brown sugar

· 1/3 cup sugar

· 1 egg plus 1 yolk

· 1 tbsp vanilla extract

· Zest of 3 limes

· 1 ¼ cup flour

· ½ cup oat flour

· 1 tsp baking soda

· ½ tsp salt

· 1 cup white chocolate chips


Cream together butter, cream cheese and sugars. Add eggs, vanilla, and lime zest. Beat until just combined. Add flours, baking soda, and salt. Once the mixture forms a dough, add the chocolate chips. Beat briefly until chips are incorporated. Wrap the dough in plastic and chill for 2 hours or overnight.


Preheat oven to 350F.


Using a small cookie scoop, spoon the dough onto a greased cookie sheet. Space the cookies about 2 inches apart. Bake for 12-14 minutes until the edges are golden brown and the center has set. Allow cookies to cool on the pan for 5 minutes and transfer to a cooling rack.


Makes 2 dozen cookies.


Notes

If you’re having trouble finding oat flour, grind oatmeal into a fine powder in your food processor.
