Who doesn't love a good bowl of "Sauseech" and Peppers?! My mom made this dish for a us all the time as kids. Most often, she'd serve it over pasta. Occasionally, we'd enjoy it stuffed into hoagie rolls. Whichever your preference, it's saucy, delicious comfort food.
Your knife cuts and noodle choice is key. If serving over a "short" noodle such as rigatoni or penne, you'll want to chopped your peppers and onions into bite-sized pieces. For whatever reason, I tend to reach for spaghetti or linguine. So I like to slice my peppers and onions thin so as you twirl your noodles along comes the strips of veggies.
Sausage and Peppers is also super simple to make in large batches and freeze for future meals.
Italian Sausage & Peppers
Ingredients
· 2 tbsp olive oil
· 1 lb Italian sausage, removed from casing
· 1 yellow onion, sliced thin
· 2 red peppers, sliced thin
· 2 green peppers, sliced thin
· 4 cloves garlic, minced
· ½ cup dry white wine
· 22oz prepared marinara sauce
· 1 tsp salt
· ½ tsp black pepper
· 1 tsp dried oregano
· 1 lb spaghetti noodles
· ½ cup pecorino romano
In the bottom of a deep skillet, heat the oil. Over medium-high heat crumble the sausage into bite-size pieces and brown. Reduce to the heat to medium-low and add the onions and peppers. Sautee until the onions are translucent. Add the garlic and cook for 2 minutes. Add the white wine and allow the liquid to evaporate. Add the marinara sauce, salt, pepper, and oregano. Simmer on low for 20 minutes until the vegetables are tender but not mushy.
While simmering the sauce, cook the noodles per package instructions in an abundance of salted, boiling water. Strain the noodles.
Toss the noodles with the sauce. Garnish with a healthy sprinkle of pecorino.
Serves 4
Notes
This is a fabulous sauce to make in batches and store in the freezer for quick, last-minute dinners.
If you’d like to change it up, ladle spoonfuls of the sausage and peppers into hoagie rolls topped with a bit of shredded mozzarella.
