Hot Elote Dip


These days, our Saturdays our typically spent poolside. Slowly but surely I'm building a repertoire of snacks perfect for outside entertaining. Something a bit more substantive than a bowl of chips but perhaps a bit more creative than a plate of cheese and crackers. Hot Elote Dip was just the ticket!


Elote is grilled corn, slathered in mayo, chili powder, lime and cotija cheese. A tasty snack in its own right, but perhaps a bit messier than what I care to eat when entertaining. Mix these ingredients together with a bit (read: a whole mess) of cheese, and you've got a great dip just screaming for a tortilla chip.


Hot Elote Dip is easily prepared in advance. Simply stash in the fridge and pop in the oven just before serving. However, if you're going for a little extra flare, you can prepare this dip in a cast iron skillet directly on the grill.


Hot Elote Dip


Ingredients

· 1 tbsp canola oil

· 1 jalapeno, minced

· 12oz corn kernels, fresh or frozen

· 4oz cream cheese, softened

· 4oz cheddar, shredded

· 4oz Velveeta, diced

· 3 tsp chili lime seasoning

· ½ tsp garlic powder

· Juice of a lime

· 3 scallions, sliced

· 2 tbsp cilantro, chopped

· 2oz cotija cheese, crumbled

· Tortilla chips for serving


Preheat oven to 375F.


Heat oil in a medium skillet over high heat. Carefully add the jalapenos and corn. If using frozen corn, stand back as it may spatter when hitting the hot oil. Allow the corn to fry and char. Occasionally stir the corn until reaching desired color.


In a large mixing bowl, combine all remaining ingredients using a spatula. Mix until relatively smooth and thoroughly mixed. Stir in the corn and jalapenos.


Pour the dip mixture into a greased 9in pie pan. Smooth into an even layer.


Bake the dip for about 20 minutes or until hot and bubbly. About half way through cooking, stir the dip to ensure the cheese melts evenly.


Garnish with cotija cheese and more scallions and cilantro if desired. Serve hot with tortilla chips.


If preferred, prepare the dip in a medium cast iron skillet directly on the grill.
