French Onion Grilled Cheese


Last week we had a dreadfully dreary, wet and cold kinda day. Felt like the perfect night to tuck into a bowl of soup and a grilled cheese! And while I'm no stranger to the classic white bread and American Singles sandwich, I thought I might class it up a bit!


This sandwich is nothing more than bread, cheese, and beautifully caramelized onions! And oh how tasty it is!


When making a grilled cheese, I find there's a few key steps... schmear the bread crust to crust with softened butter. Season the bread with a pinch of salt. And never over heat your pan. I promise, you'll end up with a stellar sandwich!


French Onion Grilled Cheese


Ingredients

For the caramelized onions

· 2 tbsp butter

· 1 sweet onion, halved and sliced

· 2 garlic cloves, minced

· ¼ tsp salt

· ¼ tsp black pepper

· 3 sprigs fresh thyme


For the sandwiches

· 3oz gruyere, shredded

· 3oz white cheddar, shredded

· 4 slices of country white or sourdough bread

· Butter, softened

· salt


For the caramelized onions…Melt butter in a large skillet. Add onions and garlic. Sweat over low heat. Season with salt and pepper. Add thyme. Sautee until the onions are golden brown – about 30-45 minutes. Add splashes of water if onions begin to stick to the pan or char. Remove the thyme sprigs from the pan and discard. Remove the onions and set aside.


For the sandwiches… Top one slice of bread with about half of the gruyere and half of the onions. Top the onions with half of the cheddar cheese. Top with another slice of bread. Spread melted butter over both sides of the sandwich. Sprinkle each side of the sandwich with a pinch of salt. Repeat with the remaining bread, cheese and onions to make a second sandwich.


Heat a large skillet over medium low heat. Grease liberally with non-stick spray. Place both sandwiches in the skillet. Cook on the first side until golden brown. Flip the sandwiches and cook until the second side is also golden brown and the cheese is melted.


Serve hot.
