There's nothing wrong with a classic cheeseburger. But I love getting creative with my burger toppers. This weekend I leaned into a Tex-Mex mash-up, and reached for my favorite fajita toppings!
Fresh pico and smashed avocado were just a given. But to take this burger to the next level, I decided to roast a poblano pepper and caramelize some onions. And finally a good schmear of chipotle mayo across a toasty bun.
Of course, you can top your burger with cheddar cheese, but for a little extra heat I decided to top mine with pepperjack cheese.
If you end up with any leftovers, these toppers make a great omelet the next morning!
Fiesta Burger
Ingredients
For the burgers
· 1 poblano pepper
· Olive oil
· 2 1/4lb beef patties
· ½ tsp seasoned salt
· 2 slices pepper jack cheese
· 2 burger buns, toasted
· 1 small avocado, lightly smashed
For the caramelized onions
· 1 tbsp butter
· ½ sweet onion, sliced
· 1 garlic clove, minced
· 1 large pinch of salt
For the chipotle mayo
· 2 tbsp mayo
· 1 tsp diced chipotles in adobo sauce
For the pico
· 1 tomato, seeded and diced
· 1 tbsp cilantro, chopped
· ½ jalapeno, minced
· 1 tbsp red onion, minced
· Juice of a ½ lime
Preheat oven to 450F.
Line a sheet pan with foil. Place the poblano pepper on the foil and cover liberally with olive oil. Roast in the oven until the skin of the pepper is blackened – about 45 to 50 minutes. Once cooked, allow to cool. Remove the skin, seeds and stem. Slice the poblano into thin strips and set aside.
For the caramelized onions… while the poblano cooks, melt the butter in a large skillet. Add the onions, garlic, and salt. Sautee on low heat until the onions are very soft and golden brown – about 45 to 50 minutes. Set aside.
For the chipotle mayo… whisk together the ingredients in a small bowl. Set aside.
For the pico… combine all ingredients in a small bowl and set aside.
In the same pan you cooked the onions, cook the burger patties. Heat the skillet to medium. Coat liberally with non-stick spray. Cook the burgers to desired temperature – about 5 minutes per side for medium. Top each burger with a slice of cheese in the last 1-2 minutes of cooking to allow the cheese to melt.
Place the burgers on the bottom buns. Spread the chipotle mayo on the top bun. Top the burger with a spoonful of smashed avocado, caramelized onions, sliced poblanos, and pico.
