My sister-in-law prepared a frittata laden with bacon and feta a little while back, and from that moment forward I felt there was no better companion for eggs in the morning!
If you're going through the trouble to fry bacon, you might as well leverage the tasty bacon fat left behind. Creating an all-in-one potato skillet seemed like the best approach. Pan-fry your potatoes in all that bacony goodness. Once golden brown, simply nestle a few eggs into the potatoes, cover and cook! Garnish with loads of feta and scallions, and you've got yourself one punchy, savory breakfast skillet. It's that easy.
I reach for this recipe a lot when entertaining. So long as you boil your potatoes the day before, this skillet comes together so very quickly. Few ingredients, minimal clean up, fancy presentation. Plus your house smells like bacon - your guests will never feel more welcome!
Feta Bacon Egg Skillet
Ingredients
· 1lb gold potatoes, diced
· 4 slices bacon
· ½ tsp seasoned salt (such as Lawry’s)
· 4 eggs
· Salt and pepper
· 2oz feta, crumbled
· 3 scallions, sliced thin
· Hot sauce, if desired
Place the potatoes in a large pot of cold water. Season liberally with salt. Bring the pot to a boil and cook for about 6-8 minutes until potatoes are fork-tender. Drain and set aside.
Slice the bacon into lardon pieces. Heat a large skillet over medium-low heat. Fry the bacon in the pan until crispy. Remove from the pan onto a plate lined with paper towels.
In the same pan, add the potatoes and fry over medium heat. Sprinkle the potatoes with seasoned salt. Continue to fry until golden brown on all sides.
Reduce the heat to low. Create 4 wells in each corner of the pan among the potatoes. Crack an egg into each well. Season each egg with a sprinkle of salt and crack of black pepper. Cover the pan and cook until the yolks reach desired doneness. About 4 minutes for runny yolks, 5-6 minutes for jammy yolks, and 7-8 minutes for hard yolks.
Remove the pan from the heat and sprinkle over bacon, feta, and scallions. Garnish with hot sauce if desired.

Notes
Potatoes can be boiled 1-2 days in advance.
