Denver Egg White Stratta


Hello my health-conscious friends! This Denver Egg White Stratta is for you!


My husband has been on a health kick recently. Eggs have been a routine point of contention in the house. He keeps pushing for egg whites, but frankly, I just don't care for them. A scrambled egg white is just so rubbery and sad. But I find if I can bring some life to them, egg whites are just as enjoyable as the classic egg.


In fact, I guarantee you will not miss the yolk in this stratta. Okay, so I used a couple yolks in the recipe below. But honestly, that was just for a bit of color. You can certainly take the liberty to swap any yolks for whites.


And of course, you can get creative with your stratta toppings. Here I've opted for the flavor profile of a Denver omelet - peppers, onions, and ham. Swap the ham for crumbled turkey sausage, or get rid of it all together for a vegetarian breakfast dish. I promise, you can't mess this one up!



Denver Egg White Stratta


Ingredients

· 1 tbsp olive oil

· ½ red pepper

· ½ green pepper

· 3 tbsp diced onion

· 2oz ham, diced

· ½ cup shredded cheddar

· 3 cups diced, day old white sandwich bread

· 12 egg whites

· 2 eggs

· 1 cup milk or half & half

· ½ tsp garlic powder

· ½ tsp onion powder

· ½ tsp sweet paprika

· ½ tsp salt

· ¼ tsp pepper


Preheat oven to 375F.


In a medium skillet, sautee the peppers and onions in olive oil over medium heat until just beginning to soften. Set aside.


Grease a 2.5qt baking dish. Scatter the bread over the bottom of the dish. Sprinkle the ham, peppers, and onions evenly over the top of the bread.


In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt and pepper until frothy. Pour the eggs over the bread cubes. Allow the bread to soak for at least 15 minutes or over night.


Sprinkle the cheddar cheese over the stratta.


Bake for 50 to 60 minutes until the center is puffed and the stratta is golden brown.


Serves 4-6

Swap the bread for your favorite gluten free bread. I’d recommend Canyonhouse Bakery Country White loaf.
