Chunky Monkey Waffles



These waffles combine all the tasty flavors of banana, chocolate, and peanut butter for one delightful morning treat! The waffles themselves are full of mashed banana, and then topped with a healthy sprinkle of chocolate chips, more bananas, and a drizzle of creamy peanut butter.


If you have a bit of a sweet tooth, I'd recommend serving with big dollops of whipped cream or a dusting of powdered sugar. But I like them just as is - not so cloyingly sweet.


Chunky Monkey Waffles


Ingredients

· 4 eggs, separated

· 1 ¾ cup buttermilk

· 4 tbsp butter, melted and cooled

· 2 very ripe bananas, mashed

· 1 tbsp vanilla extract

· 1 tsp almond extract

· 2 2/3 cup flour

· 2 tbsp sugar

· ½ tsp salt

· ½ tsp baking soda

· butter

· ½ cup semi sweet chocolate chips

· ½ cup smooth peanut butter

· 2 bananas, sliced

· Whipped cream or powdered sugar, if desired


Preheat waffle iron.


For the waffles… whip the egg whites until stiff. In a large bowl, whisk together egg yolks, buttermilk, melted butter, mashed bananas, and extracts. Sift the flour, sugar, salt, and baking soda into the mixture. Fold until just combined.


Gently fold the egg whites into the waffle batter taking care not to deflate the whites.


Grease the waffle iron with butter. Spoon waffle batter into each well in the iron. Close the iron and cook per waffle maker instructions. The waffles should be ready once you no longer see steam coming off the top of the iron.


Spoon the peanut butter into a microwave safe bowl. Heat in the microwave for 30 seconds until smooth and pourable.


Top the waffles with a sprinkle of chocolate chips, banana slices and a drizzle of peanut butter. Serve with whipped cream or powdered sugar if desired.
