Everyone needs a solid banana bread in their recipe box! This happens to be mine. It's fluffy, moist and slightly sweet. Personally, I prefer chocolate chips to chopped nuts, but totally chef's choice!
Like most American homes, by the time Friday rolls around, we usually have two or three brown bananas ready chuck. Rather than tossing them, I like to whip up this recipe for a tasty breakfast treat over the weekend. It's particularly great if you have company coming into town. You can bake into a loaf or muffins and serve alongside a fruit & yogurt bar for an easy breakfast spread.
Chocolate Chip Banana Bread
Ingredients
· 2 eggs
· 3 very ripe bananas, mashed
· ¾ cup sugar
· ¼ cup vegetable oil
· 1 tsp vanilla extract
· ¾ cup whole milk
· 2 cups flour
· 2 tsp baking powder
· 2 tsp baking soda
· ¼ tsp salt
· 1 tsp cinnamon
· ½ cup mini chocolate chips
· Raw sugar
Preheat oven to 350F. Grease loaf pan.
In a large bowl, whisk together eggs, bananas, sugar, oil, extract, and milk. Mix in flour, baking powder, baking soda, salt and cinnamon. Fold in chocolate chips.
Pour the batter into the loaf pan. Bake for 45-60 minutes until an inserted toothpick comes out clean.
