Inspired by one of my favorite oatmeal cookies, I added chocolate, tart cherries and crunchy pecans to my morning oatmeal!
This bowl of oats is unapologetically chocolatey and indulgent. But without all the guilt! Swapping chocolate chips for unsweetened cocoa powder allows me to better control the sugar content. And simmering the oats in almond milk keeps this bowl low in fat without sacrificing flavor.

Chocolate Cherry Pecan Oatmeal
Ingredients
· 6 cups milk or almond milk
· 1/3 cup unsweetened cocoa powder
· 1/3 cup sugar, packed
· ¼ tsp instant espresso powder
· 1 pinch salt
· 1 tbsp vanilla extract
· 1 ½ cup steel-cut oats
· 1 cup dried cherries
· ½ cup chopped pecans
In a medium saucepan, combine the milk, cocoa, sugar, espresso, salt and vanilla. Bring to a boil over medium high heat. Whisk in the oats and dried cherries. Reduce the heat to low and simmer uncovered for 25-30 minutes until the oats are cooked through but al dente.
Fold in the pecans. Serve hot.
