Chocolate Almond Pizzelles

Pizzelles are a bit underrated in my opinion. Of course, they aren't the classic, chewy chocolate chip cookies. But on a Christmas cookie tray, it's a welcomed change of pace to find a thin and crisp cookie!


My Chocolate Almond Pizzelles are rich in chocolatey flavor but not overly sweet. In fact, I often serve them alongside coffee in the morning, especially when entertaining house guests.


The batter is easy to whip up. You will, however, need to invest in a pizzelle iron. No, a waffle iron will not do. But they're relatively inexpensive, and you'll have it for life! Making pizzelles two at a time can be a bit time consuming, so I just make it an activity. Pop in a Christmas movie, blast a whole bunch of holiday carols, and go to town! You won't be sorry.



Chocolate Almond Pizzelles


Ingredients

· 3 eggs

· 1 cup sugar

· 1/2 cup butter, melted

· 1 tbsp vanilla

· 1/4 tsp almond extract

· 1 3/4 cup flour

· 2 1/4 tsp baking powder

· 1/4 cup cocoa


Preheat a pizzelle iron.


Whisk together the eggs, sugar, butter, and extracts. Sift together the flour, baking powder, and cocoa and add to the egg mixture.


Grease the iron with cooking spray. Using a small 1in cookie scoop, spoon a dollop of the batter onto the pizzelle iron. Firmly close the iron and cook for 30 seconds. Using a thin spatula, remove the cookie from the iron and allow to cool on a wire rack.


Makes 30 5-in cookies



Gluten Free Friendly!

Use a gluten free flour blend. For this recipe, I prefer Cup4Cup.
