
Every summer vacation I'd eagerly wait for the ice cream truck to drive through the neighborhood so I could grab a Chipwich Ice Cream Sandwich. Of course, to sandwich together cookies and ice cream is nothing novel. But can anyone deny a fabulous ice cream sandwich? I don't think so!
Making them at home is so, so fun as it offers plenty of room for creativity. The combinations of cookies and ice cream are endless! However, making something as neat, tidy and visually appealing as you would find off that ice cream truck - there in lies the challenge!
There are two keys to your sandwich making success. Chewy, underbaked cookies. And ice cream cups!
Underbaking an already soft-baked cookie recipe helps to keep the cookies pliable. That way when you go to take a bite, your ice cream remains intact rather than spilling out the sides of your sandwich.
And while yes you can simply scoop ice cream onto your cookie, I find the scoop doesn't spread neatly and evenly across your sandwich. And frankly, you don't have the luxury of time to futz with the ice cream before it turns into a soupy puddle. Fortunately for us, little 3oz ice cream cups are the perfect size for this cookie sandwich. Simply coax the ice cream from the small container with a butter knife and plop it right in between your cookies. Perfectly pleasing ice cream sandwiches every time!
Chipwich Ice Cream Sandwich
Ingredients
· 1 dozen chocolate chunk cookies*
· 6 3oz vanilla ice cream cups
· Mini chocolate chips or sprinkles, if desired
*If making your chocolate chunk cookies from scratch, underbake the cookies 1-2 minutes. The centers of the cookies will remain a bit more pliable.
Arrange the cookies in a single, flat layer on a large plate or baking sheet. Freeze for at least 30 minutes.
Cover your worksurface with a small piece of plastic wrap. Remove two cookies and one ice cream cup from the freezer. Place one cookie facedown in the center of the plastic wrap. Run a butter knife around the inside edge of the ice cream cup to free the ice cream from the container. Gently squeeze the ice cream onto the cookie taking care not to distort the cylindrical shape. Top the ice cream with the second cookie. Using your fingers, gently and evenly press the sandwich together until the ice cream reaches the edges of the cookies. If desired, dip the edges of the sandwich in mini chocolate chips or sprinkles. Quickly wrap in plastic and immediately transfer to the freezer.
Repeat with the remaining cookies and ice cream cups.
Freeze the sandwiches for at least 2 hours before serving.
Makes 6 ice cream sandwiches
