Clafoutis is a traditional French custard dessert typically made with cherries or berries. Think... super thick dutch pancake meets flan studded with sweet and tart fruits. It's served lukewarm showered with powdered sugar.
For a unique and flavorful spin, I flavored the silky custard with loads of almond extract. Cherry and almond is such a beautiful combination! And a sprinkle of toasted, sliced almonds is the perfect contrast in texture on top of the smooth custard and juicy cherries.
[Real talk... I was so excited to dive into this Clafoutis, I forgot to add the sliced almonds before snapping a quick picture. But do not neglect to adorn your Clafoutis with the almonds - so worth the extra little step!]
While typically served as a dessert, I prefer to subtly sweeten the batter making this an equally wonderful addition to your next brunch buffet. A slice of this Cherry Almond Clafoutis with a hot latte or cappuccino... YUM - Saturday morning bliss!
Cherry Almond Clafoutis
Ingredients
· Butter
· 3 eggs
· ½ cup sugar
· 1 ½ cup half & half
· 1 tsp vanilla extract
· 1 tsp almond extract
· 1/8 tsp salt
· ½ cup flour
· 16oz frozen, pitted cherries, thawed and patted dry
· ¼ cup toasted, sliced almonds
· Powdered sugar
Preheat oven to 350F. Grease a deep 9-in glass pie pan or oval baking dish with butter.
In a large measuring cup or spouted mixing bowl, whisk together eggs, sugar, half & half and extracts until frothy. Gradually add the salt and flour while continuing to whisk. Whisk until the batter is completely smooth.
Spread the cherries across the bottom of the baking dish in an even layer. Pour the batter through a fine-mesh sieve and into the baking dish over the cherries. Ensure cherries are still evenly distributed after batter has been added.
Bake for 35-40 minutes until the center is set but still slightly wobbly. Edges should be golden brown. Allow 20-30 minutes to cool.
Serve warm, but not hot. Cut into wedges or spoon like a casserole from the baking dish. Top with toasted almonds and a dusting of powdered sugar.
Serves 6-8
Notes
Fresh blackberries would substitute nicely for the cherries in this recipe.
