Cheeseburger Meatballs are fun little bites for a pop-able party app or even dinner with the kiddos. The meatball mixture is flavored with ketchup, mustard and relish and topped with melty cheese. For a little whimsical finish, I like to serve them up on shredded lettuce and sprinkle over diced pickles and grape tomato slices.
To really drive home that burger point, serve the meatballs with a creamy, tangy sauce for dipping.
Cheeseburger Meatballs
Ingredients
For the meatballs
· ¼ cup onion, diced fine
· 1/3 cup bread crumbs
· 1 tbsp ketchup
· 1 tbsp pickle relish
· 1 tsp mustard
· 1 egg
· ½ tsp salt
· ¼ tsp black pepper
· 1lb ground chuck or turkey
· 2-3 American or Cheddar cheese slices
· 8-10 grape tomatoes, sliced
· 5-6 pickle chips, chopped
· ½ cup iceberg lettuce, shredded
For the sauce
· 2/3 cup mayo
· 6 tbsp ketchup
· 4 tbsp pickle relish
· 2 tbsp onion, grated
· 2 tsp white vinegar
· 2 tsp sugar
· 1 tsp sweet paprika
· ½ tsp garlic powder
· ¼ tsp salt
· ¼ tsp pepper
Preheat oven to 425F.
In a large mixing bowl, combine the onions, garlic, bread crumbs, ketchup, relish, mustard, egg, salt and pepper. Add the ground meat. Fold the bread crumb mixture evenly into the ground meat evenly.
Using a small cookie scoop, spoon the meatball mixture onto a greased baking sheet. The mixture should make roughly 20 bite-sized meatballs. Bake for 13 minutes.
While the meatballs bake, make the sauce. Whisk together all ingredients and set aside.
While the meatballs bake, chop the cheese slices into about 1 inch squares. Place a square of cheese over each meatball and back for another 2 minutes.
Garnish the meatballs with mini tomato slices, chopped pickles, and shredded lettuce. Serve the sauce on the side for dipping.

Notes
If you prefer, you can skip the sauce all together and serve alongside classic ketchup and mustard.
