Meatball Mondays are back, sassy and spicy! When I'm short on time but looking for something rib-sticking, I usually reach for one of my meatball recipes. These Buffalo Chicken Meatballs always hit the spot.
Ground chicken is usually a little drab. But with a dousing of garlicky, buffalo sauce and a creamy blue cheese dunk, boring chicken becomes spicy and punchy!
It's perfect as a Monday Night meal served up with oven-baked fries. Dare I say, it might even be perfect alongside crudites as a snack for your next Game Day.
Buffalo Chicken Meatballs
Ingredients
· 1/3 cup bread crumbs
· ¼ cup scallions, chopped
· 1 tbsp parmesan cheese, grated
· 1 egg
· ½ tsp salt
· ¼ tsp black pepper
· ½ tsp garlic powder
· ¼ tsp onion powder
· ½ tsp Italian seasoning
· 1lb lean ground chicken
· ¾ cup buffalo-style hot sauce
· 1 tbsp butter
· 1 garlic clove, peeled
· Ranch or blue cheese dressing
Preheat oven to 425F.
In a large mixing bowl, combine the bread crumbs, scallions, cheese, egg, and spices. Add the ground chicken. Fold the bread crumb mixture evenly into the chicken.
Using a small cookie scoop, spoon the meatball mixture onto a greased baking sheet. The mixture should make roughly 18-20 bite-sized meatballs. Bake for 15 minutes until cooked through.
While the meatballs cook, add the hot sauce, butter, and garlic clove to a small pot and bring to a very gentle simmer. Cook for 10 minutes and then remove the garlic clove. Place the hot meatballs in a large bowl, and pour over the sauce. Toss to coat.
Serve the meatballs alongside ranch or blue cheese dressing and crudités.
