Buffalo Chicken Dip. What a classic! Something about that vinegary, hot sauce heat is just so addictive. I can eat it by the chip-ful!
Some retro dip recipes call for canned chicken. I get it; it's easy. But also, it's chicken in a can. Why not reach for a rotisserie chicken instead? It's just as easy and, I think, that much more flavorful. I prefer to shred my chicken pretty fine so that it incorporates evenly into the cheesy dip. I leave this decision in your capable hands.
You'll also notice I opted to add blue cheese dressing vs. ranch dressing to the dip. I really am a blue chese kinda gal. I'd venture to say even those adverse to blue cheese might truly enjoy it in this dip. Especially since the funkiness of the blue cheese is pretty well balanced by the cheddar and cream cheese. But again, I leave this decision in your capable hands.
Whatever twists and turns you incorporate in this recipe, just be sure and serve up plenty of tasty dippers. Tortilla chips, carrot sticks, celery stalks... even a Ritz cracker would be great!
Buffalo Chicken Dip
Ingredients
· 8oz cream cheese, softened
· ¼ cup Greek yogurt
· 1/3 cup chunky blue cheese dressing
· 5oz Franks Red Hot Sauce
· 6oz sharp cheddar, shredded, divided
· 1 tsp garlic powder
· 1 tsp onion powder
· 2 cup finely shredded rotisserie chicken
· 1-2oz blue cheese crumbles
· 1 celery stalk, diced
· Dippers for serving (tortilla chips, carrots sticks, celery sticks)
Preheat oven to 375F.
In a large mixing bowl, combine the cream cheese, yogurt, blue cheese dressing, hot sauce, 4oz shredded cheddar, garlic powder, and onion powder. Once relatively smooth, fold in the shredded chicken.
Pour the dip mixture into a greased 8in baking dish or pie pan. Smooth into an even layer. Top with the remaining shredded cheese.
Bake the dip for about 20 minutes or until hot and bubbly.
Garnish with blue cheese crumbles and diced celery. Serve hot with chips or veggies for dipping.
If preferred, pour the dip into a seasoned castiron skillet and heat directly on the grill.
