You know my rule... when the house guests come into town, out come the quick bread recipes! This weekend's flavor... Blueberry Banana.
My Chocolate Chip Banana Bread is a tried and true recipe. In fact, I usually have everything on hand pretty much any day of the week to bake this bread at a moment's notice. For fresh flare, I decided to swap the chocolate chips for juicy blueberries. Since I nixed the sweet chocolate treat, I gave this particular loaf a beautifully crisp and crackly cinnamon sugar topping.
Ordinary ingredients transform into something stellar for a homemade addition to your breakfast table or convenient afternoon snack!
Blueberry Banana Bread
Ingredients
For the bread
· 2 eggs
· 3 very ripe bananas, mashed
· ¾ cup sugar
· ¼ cup vegetable oil
· 1 tsp vanilla extract
· ¾ cup whole milk
· 2 cups, plus 1 tbsp flour
· 2 tsp baking powder
· 2 tsp baking soda
· ¼ tsp salt
· ½ tsp cinnamon
· 1 cup blueberries
For the topping
· ¼ cup sugar
· ½ tsp cinnamon
Preheat oven to 350F. Grease loaf pan.
For the bread… In a large bowl, whisk together eggs, bananas, sugar, oil, extract, and milk. Mix in 2 cups flour, baking powder, baking soda, salt and cinnamon.
Toss the blueberries in 1 tbsp flour. Fold the blueberries into the batter.
For the topping… In a small ramekin, combine the sugar and cinnamon.
Pour the batter into the loaf pan. Sprinkle the top of the batter liberally with the cinnamon sugar. Bake for 60-75 minutes until an inserted toothpick comes out clean.
