Blueberry Almond Oatmeal


During the week, I usually enjoy a yogurt bowl loaded with fruit and granola. But the doctor recently told me to cut out dairy, so she's cramping my breakfast style. Since the weather started to turn, I figured instead of yogurt, I'd start making myself an oatmeal bowl.


First, let's talk oats. You can certainly reach for rolled oats. But I prefer steel-cut. The texture is far superior, and I hear they are that much more nutritious. So win, win in my book!


And while the package instructions often call for simmering in water, I prefer milk - they cook up SO much creamier! Of course, in an effort to nix the dairy, almond milk works wonderfully in this recipe. In fact, I usually prefer it since it helps cut the calories. Simmered with a bit of sweet and spice, and you have the perfect canvas for all kinds of delightful toppings!


Blueberry Almond seemed like a pretty stellar flavor combo this week. I like to spoon blueberries into the bottom of my bowl, pour over hot, creamy oatmeal studded with crunchy almonds, and drizzle over a bit of blueberry jam and almond butter! Lots of layers of flavor and texture all in one bowl!


Blueberry Almond Oatmeal


Ingredients

· 4 cups milk or almond milk

· ¼ cup honey

· 2 tsp cinnamon

· 1 pinch salt

· 2 tsp vanilla extract

· ½ tsp almond extract

· 1 cup steel-cut oats

· ½ cup slivered almonds

· 2 cups blueberries, fresh or frozen

· 4 tbsp creamy almond butter

· 4 tbsp blueberry jam


If using frozen blueberries, remove from the freeze about 30 minutes before serving to allow to thaw.


In a medium saucepan, combine the milk, honey, spices and extracts. Bring to a boil over medium high heat. Whisk in the oats. Reduce the heat to low and simmer uncovered for 25-30 minutes until the oats are cooked through but al dente. Fold in the almonds.


To serve, spoon blueberries into the bottom of a cereal bowl. Pour over hot oatmeal. Drizzle over a spoonful of almond butter and blueberry jam.
