BBQ Sweet Potato


Baked potatoes are delicious, and I love BBQ. But until moving to Texas, I had never considered combining the two. Who needs a bun when you've got a steaming potato?


For an easy weeknight meal, I opted to prepare my chicken in the crockpot. But if you've got the time to grill or smoke your chicken, you'll take this potato to the next level! Just be sure to toss in a bit more BBQ sauce before topping your potato.



BBQ Sweet Potato


Ingredients

· 1lb boneless, skinless chicken breasts

· ¾ cup BBQ sauce, separated

· 4 medium sweet potatoes

· Salt & pepper

· 4 slices bacon, cooked and crumbled

· 1 cup shredded cheddar cheese

· 4 scallions, sliced thin

· 1/3 cup sour cream


Add the chicken and ½ cup of BBQ sauce to the bowl of a crockpot. Cook on high for 4 hours.


Preheat oven to 400F.


Prick the potatoes with a fork and place on a baking sheet. Bake for 60 minutes until the potatoes are soft and cooked through.


Slice each potato in half and allow some steam to escape. Using a fork, mash each potato while leaving the skin relatively intact. Season to taste with salt and pepper.


Using two forks, pull the chicken into bite sized pieces. Toss in the remaining ¼ cup BBQ sauce. Pile the chicken in the cavity of each baked potato.


Top each potato with crumbled bacon, cheese, scallions and sour cream.


Serves 4
