One of our favorite pizza joints makes a BBQ Chicken Pizza. I'm sure yours probably does too! While perhaps not very traditional, it's a delightful combination. So I thought I might riff on a BBQ Pizza and stuff it in a Quesadilla!
My BBQ Chicken Quesadilla is layered with tangy BBQ chicken, sweet pineapple, punchy red onions, smoky bacon, and cheese, of course! To keep it easy, I like to use leftover or rotisserie chicken. Of course, don't let me keep you from smoking your own bird - I'm sure it'd be delicious! Same goes for the BBQ sauce. If you're so inclined to make it from scratch, great. Otherwise, just reach for your favorite store-bought brand. Stubb's Sweet Heat is our family sauce of choice.
Quesadillas make for a hearty party app or fun family spread in front of the TV. I don't often pass up the opportunity to smother something in guacamole. But BBQ sauce and ranch dressing also make for delightful dunkers for these quesadillas.
BBQ Chicken Quesadillas
Ingredients
· 4 bacon slices
· 3 cups rotisserie chicken, pulled
· 1 cup BBQ sauce
· 6 10-in flour tortillas
· 6oz sharp cheddar, shredded
· 6oz mozzarella, shredded
· ½ red onion diced
· ¾ cup canned pineapple, diced
Bring a large skillet or griddle to medium low heat. Cook the bacon until nearly crisp. Remove from the pan and allow to drain on paper towels. Roughly chop the bacon and set aside.
In a bowl, combine the chicken and BBQ sauce. Toss the chicken to coat and set aside.
Wipe away any excess bacon grease from the pan using paper towels. Bring the skillet or griddle to medium low heat.
Place a tortilla on the skillet. Sprinkle half of the tortilla with about a ½ oz each of both cheddar and mozzarella cheeses. Top with a sprinkle of red onion, diced pineapple, and bacon pieces. Spread a heaping spoonful of the chicken over the toppings. Top with another ½ oz each of cheddar and jack. Fold the other half of the tortilla over the filling. Cook on the first side until golden brown and crispy. Flip and cook again until golden brown as well.
Repeat with remaining tortillas and filling.
Slice into wedges and serve with more BBQ sauce, ranch dressing or guacamole.
Makes 6 quesadillas
Gluten Free Friendly! Rather than substitute with corn tortillas, we prefer Mission GF Soft Taco tortillas for our quesadillas.
