Banana Bread Overnight Oats

Overnight Oats are so delightfully low maintenance. Simply stir together a few pantry ingredients and allow it to chill overnight. And then you wake up to a well balanced breakfast! I often make a batch at the start of a busy week to save me the hassle of having to prep or cook breakfast. Just grab and go.


That said, I do like to change up the flavor profile and mix-ins just to keep it interesting. The rendition this time? Banana Bread! That said, I folded in diced bananas, walnuts for buttery crunch, and a small hand full of mini chocolate chips for a little extra sweetness and fun. If you deserve a little something extra, might I recommend a drizzle of Nutella over top?



Banana Bread Overnight Oats


Ingredients

·       2 cups rolled oats

·       1 tbsp ground flax seed

·       1 tbsp chia seed

·       1 tsp cinnamon

·       Pinch of salt

·       3 cups unsweetened almond milk

·       1 tsp vanilla extract

·       2 tbsp honey

·       4 bananas, divided

·       ½ cup walnuts, chopped

·       2 tbsp mini chocolate chips

·       Nutella, optional


In a large bowl, combine the oats, flax seed, and chia seed, cinnamon and salt. Mix in the almond milk, vanilla extract and honey. Take care to mix thoroughly so that the flax seed is evenly distributed and does not form clumps.


Peel and dice two of the bananas. Fold the diced bananas, walnuts and chocolate chips into the oatmeal.


Transfer the oats to an airtight storage container. Allow the oats to chill in the fridge overnight.


Spoon the chilled oats in a bowl and top with additional banana slices and a drizzle of Nutella if desired.  


Serves 4
