I'm all about Taco Night. Chicken, fish, beef - you name it, I'm game to wrap it in a tortilla and gobble it up! And while traditional Tex-Mex spices are perfectly lovely, I was feeling a bit of fusion flavor.
Just as you would for a typical Taco Night, brown up some ground beef (or turkey). But for a fun burgery spin, throw some bacon into the mix and season with dollops of ketchup, mustard and relish. Topped with plenty of cheese, lettuce, tomato and pickle and you've got yourself a Cheeseburger Taco.
Quick and easy to pull together mid-week!
Bacon Cheeseburger Tacos
Ingredients
· 1 tbsp olive oil
· 4 slices bacon, chopped into lardon
· 1lb lean ground meat, turkey or beef
· ½ small onion, diced
· 1 tbsp Worcestershire sauce
· ½ tsp salt
· ½ tsp pepper
· 2 tbsp ketchup
· 2 tbsp yellow mustard
· 1 tbsp sweet relish
· 12 small corn or flour tortillas
· 1 cup shredded cheddar cheese
· 1 cup shredded lettuce
· 1 tomato, diced
· ¼ cup dill pickle chips
· ¼ red onion, sliced very thin
· 1 avocado, sliced thin
Heat oil over medium heat in a large skillet. Add the bacon pieces and allow the bacon to render. Add the ground meat. Crumble and brown the meat. Reduce the heat to medium low and add the onion. Cook until translucent. Season with Worcestershire, salt, and pepper. Stir in the ketchup, mustard and relish. Keep warm over low heat until ready to serve.
While cooking the meat, preheat oven to 350F. Wrap the tortillas in aluminum foil and place in the oven for at least 10 minutes or so. Keep warm in the oven until ready to serve.
To serve, spoon a generous portion of the meat mixture down the center of a tortilla. Top with a sprinkle of cheese, lettuce, tomato, pickles, onion and a slice of avocado. Repeat with the remaining tortillas.
