Having grown up in Hungary, my grandmother cultivated stellar strudel recipes. And while I'd much prefer to eat a slice of strudel for breakfast every day, I just cant seem to rationalize it. So instead, I thought I'd use an Apple Strudel for inspiration when mixing up a bowl of oatmeal.
Creamy cinnamon oats are studded with juicy apples, crunchy walnuts, and plump raisins. to be honesty, this recipe is probably on par with most Apple Cinnamon Oatmeals. But isn't your morning fixin' to be that much more exciting when we call it "Apple Strudel Oatmeal?"
Apple Strudel Oatmeal
Ingredients
· 4 cups milk or almond milk
· ¼ cup brown sugar, packed
· 2 tsp cinnamon
· 1 pinch salt
· 1 tbsp vanilla extract
· 1 cup steel-cut oats
· 1 Gala Apple, peeled and diced
· 1 Granny Smith Apple, peeled and diced
· ½ cup raisins
· ½ cup chopped walnuts
In a medium saucepan, combine the milk, sugar, spices and vanilla. Bring to a boil over medium high heat. Whisk in the oats. Add the apples and raisins, Reduce the heat to low and simmer uncovered for 25-30 minutes until the oats are cooked through but al dente.
Fold in the walnuts. Serve hot.
