Apple Gingerbread Oatmeal


The name pretty much says it all. Apples and creamy oats are spiced just as you would a traditional gingerbread cookie. Plenty of ground ginger, a touch of cinnamon and clove, and swirls of molasses. This bowl of oats is going to make you want to curl up in your sweats right next to your Christmas tree!


Apple Gingerbread Oatmeal


Ingredients

· 4 cups milk or almond milk

· ¼ cup molasses

· ¼ cup brown sugar

· 2 tsp ground ginger

· 1 tsp cinnamon

· ½ tsp ground clove

· 1 pinch salt

· 2 tsp vanilla extract

· 1 cup steel-cut oats

· 1 Gala Apple, peeled and diced

· 1 Granny Smith Apple, peeled and diced

· ½ cup chopped pecans


In a medium saucepan, combine the milk, molasses, sugar, spices and vanilla. Bring to a boil over medium high heat. Whisk in the oats. Add the apples and pecans. Reduce the heat to low and simmer uncovered for 25-30 minutes until the oats are cooked through but al dente.


Serve hot.
